I love to make brisket, and I do it quite often. Cheddar, Colby Jack, or Pepper Jack are all tasty options. It's slightly sweeter than other types of cheese, but it melts into a gooey, delicious mess that is sure to please everyone at your table. Given my love for sandwiches I couldn't pass up the chance to whip up a brisket grilled cheese.
